Development “Sobremadre” is basically ferment white grape with some of the skins (25%) of tempranillo grape juice being the rest wort virgin. Once the fermentation is not drawn off and macerated with its lees and these skins for about six months (depending on the year can vary). All this with temperature control to 18°C. It is then bottled directly from the fermentation cuba without clarification or filtration lands.
Ruby red color lower middle layer, with clearly visible traces of carbon that has formed endogenously as a result of contact of the must with the “mother” (stripped and squeezed grape).
Aroma of fine yeast mixed with fruit touches that will grow over time.
Wide mouth and sparkling, with an ending reminiscent of bitter almonds.
It has a wide range of possibilities. Appetizers, cheeses, salads, oily fish and rice are optimal, to which must be added meats and stews.
